Tomato RiceIngredients for preparing Tomato Rice

  • Basmati Rice   -   2 cup
  • Onion: chopped   -   2 nos.
  • Ginger garlic paste   -   2 tsp
  • Tomatoes: chopped   -   4 nos.
  • Green chillies: chopped   -   2 nos.
  • Bay Leaf   -  2 nos.
  • Cloves   -  4 nos.
  • Cardamom Seeds  -  3 nos.
  • Cinnamon   -   1 inch piece
  • Turmeric Powder   -  ½   tsp
  • Chilli Powder   -   1  tsp
  • Garam Masala Powder    -  1  tsp
  • Mint Leaves: chopped   -    3 tbsp
  • Coriander Leaves: chopped    – 4  tbsp
  • Salt to taste  -   ½  tsp
  • Ghee    -   3 tbsp

Steps for preparing Tomato Rice

  1. Wash and soak basmati rice for 30 minutes, drain the water completely and pressure cook rice along with 2 cups of water
  2. Heat ghee in a pan; add bay leaf, cloves, cinnamon and cardamom seeds. Fry for a few seconds till fragrant and then add chopped onions, saute till slightly golden brown.
  3. Now add ginger garlic paste and saute for a  couple of minutes. The raw smell should go away.
  4. Then add chopped tomatoes and green chillies followed by all the powders and stir-fry for few minutes until tomato pieces become pulpy.
  5. Sprinkle mint leaves, coriander leaves and salt.  Stir to combine.
  6. Now mix the cooked rice with sauteed mixture and simmer for few minutes. Delicious tomato rice is ready.
  7. Garnish with chopped coriander leaves or tomato and serve hot.
