Paneer Lemon Rice Recipe

Ingredients for preparing Paneer Lemon Rice

  • Basmati Rice: cooked   -  2  cups
  • Paneer   -   1   cup
  • Kahsmiri Chilli   Powder  -  1  tsp
  • Garam Masala  -   1 ½   tsp
  • Turmeric Powder   -   1  tsp
  • Cumin Seeds Powder    -  ½  tsp
  • Yoghurt   -   3  tbsp
  • Lemon Juice   -   3   tbsp
  • Onion: chopped   -   1  no.
  • Ginger: chopped  -   1 piece
  • Green Chillies: chopped  -   2  nos.
  • Salt to taste  -  ½    tsp
  • Shahjeera     1    tsp
  • Sugar  -     1  tbsp
  • Mint Leaves   -  3  stalks
  • Cashew Nuts   -   10  g
  • Ghee   -  2  tsp
  • oil  -  2 tbsp

Steps for preparing Paneer Lemon Rice

  1. Marinate paneer with ginger garlic paste, kashmiri chilli powder, half teaspoon garam masala, half teaspoon of turmeric powder, cumin seeds powder, yogurt and 2 table spoon lemon juice. Keep it aside for half an hour.
  2. Heat oil in a pan, shallow fry the marinated paneer till it turns golden brown. Drain the excess oil and keep aside.
  3. In the remaining oil add shahi jeera/ and sugar and allow the sugar to get caramelized.
  4. Add ginger and chopped green chillies, saute for a minute. Add onions and saute till it turns golden brown.
  5. Now add turmeric powder, garam masala and the fried paneer. Stir to combine.
  6. Add rice and mix well, sprinkle lemon juice and salt. Stir gently.
  7. Fry cashew nuts in ghee till slight brown. Garnish the rice with fried cashew nuts, and fresh mint leaves.
  8. Serve hot.
