Lemon RiceIngredients for preparing Lemon Rice

  • Rice  -  2 cups
  • Lemon Juice  -  ½ cup
  • Onion: chopped  -  1 no.
  • Chana Dal: soaked  -  3 tbsp
  • Peanuts: peeled  -  ½ cup
  • Cumin Seeds  -  ½  tsp
  • Mustard Seeds  -  ½  tsp
  • Turmeric Powder  -  ½  tsp
  • Red chilli Powder  -  1  tsp
  • Green Chillies: cut lengthwise  -  3 nos.
  • Curry Leaves  -  2 stalks
  • Oil  -  2 tbsp
  • Salt to taste  -  ½  tsp

Steps for preparing Lemon Rice

  1. Wash and soak the rice in water for 30 minutes.
  2. Drain the water and cook the rice in a pressure cooker. The rice grains should not stick together.
  3. Heat oil in a frying pan, fry the peanuts until  the color changes to light brown. Keep aside.
  4. In the remaining oil splutter cumin seeds and mustard seeds. Then add chopped onion and sauté well till golden brown.
  5. Add red chilli powder, turmeric powder, salt and green chillies. Saute for a couple of minutes.
  6. Now drop chana dal and stir-fry for about two minutes.
  7. Finally add cooked rice and peanuts, squeeze lemon juice over the rice; then mix gently and remove from the fire. Adjust the salt level.
  8. Garnish with curry leaves and serve hot.
