Chicken Tomato Rice Recipe

Ingredients for preparing Chicken Tomato Rice

  • Basmati Rice  -   2  cups
  • Chicken: minced    -  1  cup
  • Tomato puree   -  ½  cup
  • Onion: chopped  -  1 no.
  • Green Chillies   -  3  no.
  • Ginger: chopped   - 1  tsp
  • Garlic: chopped  -  1  tsp
  • Chicken Masala   -  1  tbsp
  • Chilli Powder   -  1  tsp
  • Pepper Powder  -  ½  tsp
  • Turmeric Powder  -  ½  tsp
  • Cinnamon Pieces (Patta)  -  1  piece
  • Cloves (Kariampo)   -  3  nos.
  • Cardamom Seeds (Elakka)  -   2  nos.
  • Coriander Leaves: chopped  -  2  stalks
  • Ghee  -  2  tbsp
  • Cashew Nuts   - 10   g
  • Raisins (Unakka Munthiri)   -  10  g
  • Salt to taste  -  ½  tsp

Steps for preparing Chicken Tomato Rice

  1. Wash basmati rice for 3 to 4 times and soak in water for 30 minutes.
  2.  Drain the water and cook rice with water, cinnamon, cloves, cardamom, salt and coriander leaves.
  3. Cook chicken with salt, turmeric and pepper powder. Keep it aside.
  4. Fry cashew nuts and raisins in ghee till cashew nuts become slight brown colour. Keep it aside.
  5. Heat ghee in a pan; add chopped onion, green chilli, ginger and garlic. Saute till the raw smell disappears and onion becomes translucent.
  6. Then add tomato puree and chicken masala, chilli powder and salt. Fry for a while.
  7. Now add cooked chicken and fry for a minute.
  8. Finally add cooked rice and mix well.
  9. Garnish with fried cashew nuts and raisins. Serve hot along with raitha.
