Chicken Fried RiceIngredients for preparing Chicken Fried Rice

  •  Basmati Rice   -   2 cups
  • Chicken: boneless   -  2 cups
  • Onion   -  1 no.
  • Red Chillies: thinly sliced   -  2 nos.
  • Garlic: chopped  –  3 cloves
  • Turmeric Powder  -  ½  tsp
  • Pepper Powder  –  1 tsp
  • Turmeric Powder  -  ½  tsp
  • Cloves   -  2  nos.
  • Cinnamon  -  1 piece
  • Cardamom Seeds   -  3 nos.
  • Spring Onion: chopped   -   ½  cup
  • Beans: chopped  -  ¼  cup
  • Carrot   –  ¼  cup
  • Ghee   -   2  tbsp
  • Soya Sauce   -   2  tbsp
  • Salt to taste  -  ½  tsp

Steps for preparing Chicken Fried Rice

  1. Wash and soak basmati rice for 15 to 20 minutes in water.
  2. After that drain the water completely and stir fry rice in ghee for few minutes. Keep it aside.
  3. Cut the chicken into small pieces, and cook them in a pressure cooker with little salt and turmeric powder until tender.
  4. Heat ghee or oil in a large vessel, fry cloves, cinnamon, cardamom for half a minute. Then add rice along with 4 cups of water and cook covered on medium flame until it is done. Adjust the salt level. Take care not to break the rice grains.
  5. Once the rice is cooked, remove it from the fire and set aside.
  6. Heat 1 table spoon ghee in a pan, sauté chopped onion, garlic, red chillies and chopped vegetables till tender and fragrant.
  7. Now add cooked rice and cooked chicken, mix gently. Sprinkle pepper powder.
  8. Finally toss the rice with soya sauce; switch off the stove.
  9. Serve hot with raita or any Desired curry.
