Carrot Rice Recipe

Ingredients for preparing Carrot Rice

  • Basmati rice  –   2  cups
  • Carrots: peeled and grated   –   1 cup
  • Chana dal    –   1 tsp
  • Cloves    –  3 nos.
  • Cinnamon  - 1 piece
  • Cardamom Seeds  -  3 nos.
  • Onion: chopped    – 1 no.
  • Ghee   - 2  tbsp
  • Red chilli Powder   –  2  tsp
  • Turmeric Powder  -  ½  tsp
  • Garam Masala Powder  -  1 tsp
  • Peanut   –  2  tbsp
  • Coriander Leaves  -  2 tbsp
  • Salt to taste  -  ½  tsp

Steps for preparing Carrot Rice

  1. Wash and soak the rice in water for 15 to 20 minutes. Drain the water and pressure cook it for 2 whistles till the rice is cooked.
  2. Heat ghee in a pan, stir fry cloves, cinnamon, chana dal and cardamom seeds till fragrant. Add chopped onion, sauté till golden brown.
  3. Now add grated carrot and sauté on low flame for a while. Add turmeric powder, chilli powder and salt.
  4. Once the carrot is cooked add garam masala powder and mix well.
  5. Finally add cooked rice and mix gently. Take care not to break the rice grains.
  6. Add Peanuts and freshly chopped coriander leaves, stir gently.
  7. Serve hot with Raitha or any desired curry.
